My friend Cecilia is from Mexico City. I enjoyed the way she served fresh carrots.
Dump a bowl of baby carrots in a bowl.
Sprinkle on cayenne pepper and salt.
Squeeze fresh lime juice over them, until they are all wet.
Enjoy. The longer it marinates, the better.
This is also good to do with cucumbers, jicama, or fresh pineapple (except you can omit the lime juice since pineapple has its own juice).
