French Bread Margherita Pizza

This recipe is from Panera Bread, but I modified it a little.  It's been a success every time I've made it, and it was our Valentine's Day dinner.  It's quick and delicious and we always have leftovers, too.

INGREDIENTS
  • 1 loaf French bread, cut in half lengthwise, then into thirds
  • 1 ½ cups canned tomato sauce or pizza sauce
  • Basil, fresh or dried
  • 3 large Roma tomatoes, sliced
  • 16 ounces fresh mozzarella, sliced 
  • Salt and freshly ground black pepper, to taste

DIRECTIONS
  1. Preheat oven to 475°F.
  2. Lightly toast the bread for 5 minutes.
  3. Spoon the tomato sauce over the bread. (Use lots of sauce! It gets absorbed quickly.) Top with the basil, then tomato slices, then the cheese.
  4. Bake for 8-10 minutes, checking frequently.
