Ham and Cheese Frittata

Ingredients

  • 6 Tbsp oil
  • 4 cups potatoes(I used the frozen hashbrowns that are cut into cubes.)
  • 1 1/2 tsp salt divided
  • 1/2 tsp pepper
  • 1 lb ham chopped
  • 1 large bell pepper, seeded and diced
  • 12 eggs
  • 6 Tbsp milk
  • 1/2 tsp garlic
  • fresh green onions, diced
  • 2 cups cheese
  • 1 1/2 cups salsa, warmed

Directions 

  • Preheat oven to 350 
  • Add oil to skillet and cook potatoes until slightly browned and then add ham, bell pepper and half the seasoning
  • While that's cooking mix together the eggs, milk, garlic and green onions
  • Spray a rectangle dish with non-stick cooking spray and then add the potato mixture
  • Pour eggs on top and then sprinkle with remaining salt(and more seasonings, if desired.)
  • Cover and bake for 15 minutes. Then remove from oven, uncover and add the cheese. Cook another 15 minutes.
  • Finally, broil for 2-5 minutes or until the cheese starts to brown a bit.
  • Let sit for 10 minutes before cutting. Top with warmed salsa and enjoy!
