Tomato, Mozzarella, Pesto Sandwich


I had this sandwich at Earth Fare today, and it was a nice combination. I hope to try replicating it at home soon!   Get some sourdough bread and coat the sides with fresh pesto sauce.  Add two tomato slices and about 1/2 inch slice of fresh mozzarella.   Grill over the stove or in a sandwich press.

For fresh pesto, I use this recipe from Allrecipes.com - with sunflower seeds instead of pine nuts.
