I like to cook up a batch of these on the weekend. Everyone eats and we still have enough leftover to freeze and eat during the coming week.
Ingredients
- 3 cups all-purpose flour
- 7 teaspoons baking powder
- 1 1/2 teaspoon salt
- 2 tablespoon white sugar
- 2 1/2 cups milk
- 2 eggs
- 6 tablespoons butter, melted
- 2 teaspoons vanilla
Directions
- In a large bowl, combine the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter, vanilla and mix until smooth. After I combine the ingredients an mix I sometimes add in mashed banana or other fruit.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
