Taco Bake

Taco Bake

(To make this healthier, I used whole wheat pasta.  You can add more cheese and macaroni if you like.  Serve this with a salad, carrot or celery sticks, or fruit; and you have a quick meal.  It has that Mexican flavor, but is quick and easy.)

1 lb. ground beef
1 medium onion, chopped
1 pack taco seasoning mix
15-oz can tomato sauce
3 cups macaroni, cooked
8 oz sour cream
1 cup shredded Cheddar cheese
1/4 cup grated Parmesan cheese

Brown beef and onion in a skillet.  Drain if needed. Stir in seasoning mix and tomato sauce.  Heat mixture.  Combine cooked macaroni, sour cream and 1/2 cup cheddar cheese.  Spoon the macaroni mixture into a greased 13 X 9 pan.  Top with the beef mixture and remaining cheese.  Bake uncovered at 350 for 30 minutes.

  1. I've started making my own taco seasoning. This is the recipe that I use. I love it because it's easily adapted to get the exact flavor you want.
