Salmon Splurge Salad

This is my favorite lunch to make for myself.  Jason would enjoy it but I haven't tried it on my kids yet. The fresh salmon was on sale this week so I purchased about a pound.  It should make 3 awesome lunches.
Take a piece of fresh salmon and place it, skin-side-down, on a preheated nonstick skillet.  Cook over medium approximately 5 minutes.  Flip it over and cook another 5 minutes, or to your liking.  While it is cooking, prepare your salad plate with your favorite green leaves, tomatoes, mushroom slices, blueberries, and sunflower seeds or roasted nuts to give some crunch.  When the salmon is done, place on top of the leafy bed.  Season with salt and pepper.  Squeeze fresh lemon juice over the dish or use your dressing of choice.
