I prepared my chicken and started to cook it in the iron skillet. Unfortunately, the breadcrumbs started to brown too quickly. I transferred the chicken to a cooling rack set on top of a deep baking sheet and finished cooking it in the oven.
Ingredients
- assorted pieces of chicken with skin removed
- 1 cup flour
- 1 cup unseasoned breadcrumbs
- 1 egg, beaten
- 1/2 cup buttermilk(or milk soured with 1 tsp vinegar)
- 3 tsp seasoning of your choice(I used store bought Greek seasoning)
- 1 cup canola, vegetable or peanut oil
Directions
Preheat oven to 350. Preheat the oil in the frying pan.
In one mixing bowl, combine the flour and the seasoning of your choice. In a second mixing bowl combine the egg and the buttermilk. Put the breadcrumbs in a third bowl.
Dip the chicken into the flour mixture first, then into the egg and finally into the breadcrumbs. Place on a plate.
Once all of the chicken is coated, fry it in the pan. Prepare a cooling rack on top of a deep cookie sheet, cover the cookie sheet in aluminum foil.
Place the chicken on the cooling rack and add another sprinkling of your seasoning. Bake for 45 minutes or until the juices run clear.
